The Cederberg region of the western Cape of South Africa is the only place that Rooibos is grown in the world. This small leguminous shrub has many dark green needle shaped leaves and fine erect red coloured stems, up to 2 meters in height, with tiny yellow flowers in spring through early summer. Each flower produces a one seeded small bean. Rooibos has a long tap root, sometimes up to 2 m in length, enabling the plant to survive extended periods of drought.

Only the leaves and twigs are used. The leaves are handpicked in summer withered immediately, and steamed to prevent oxidation. The leaves are then rolled and dried. This process prevents fermentation and as a result some of the benefits are increased as much as 30 to 40 times that of the fermented red Rooibos (some chemicals are oxidized by enzymes during fermentation, resulting in the typical red colour and flavour of Rooibos tea). The resulting green tea has a more yellow colour than the red of the fermented Rooibos and is more delicate, aromatic, and with a heartier herbal taste and lighter colour and is caffeine free.

Green Rooibos Extract is a bioflavonoid rich, potent extract used primarily for fighting free radicals. Green Rooibos Extract contains a potent anti-oxidant, EGCG (Epigallocatechin Gallat), which is over 200 times more powerful than vitamin E in neutralizing the pro-oxidants and free radicals that attack lipids in the brain.
